I would never wait that long in line for a taco. We got in line at Panchos before they opened. The tacos were decent and full of meat, however they were not the best I have had either. There are plenty of taquerias in SLP that are just as good, and we can get cilantro separate and carmalized onions on our tacos as well.

I ordered 3 of the 4 menu items. (i skipped the pork) The meat was amazing as a taco. The tortilla was a very good and hand made. They only offer two salsas. One dark red which i found horrible to my taste. Tasted like old bbq sauce with vinegar and mole. The other was a good earthy green salsa with noticeable chunks of onion. Although they tout that the meat is so good that it really does not actually need a salsa, i found that it does need a bridge to pair the tortilla to the meat. For my taste i would have preferred a Salsa Mexicana. Does it all merit a Michelin Star? It lacks a bathroom and its food safety is poor. They keep the large tub of masa on a stool with workers and customers hovering over constantly. And the tray of uncooked meat is on the corner of the counter with everyone also hovering over. From hair to people touching it likely ends up on your meat or in the tortilla. If that is worthy of 1 Star, then without question Pancho’s Takos (Puerto Vallarta) deserves 2 stars. (And i haven’t eaten there in a few years because of the line)
